The Honey Powder Market comprises honey converted into a free-flowing dry ingredient that food, beverage, nutraceutical, pharmaceutical and cosmetic manufacturers dose by weight in place of liquid honey. Because the sugars in honey have a very low glass transition temperature, most commercial honey powder is dried onto a carrier, typically maltodextrin, wheat or tapioca starch, or gum arabic, at a honey solids content of roughly 50% to 70%. A smaller group of producers supplies high-honey and carrier-free powders made by vacuum drying, freeze drying or patented dehydration processes, and a third group supplies honey granules and flakes, including honey co-crystallised with cane sugar. The market is measured at business-to-business prices on a finished-powder basis, including any carrier, and excludes liquid, creamed and set honey, honey-flavoured powders that contain no honey solids, finished consumer products containing honey, and other bee products. The ecosystem spans beekeepers and cooperatives, honey packers and blenders, honey powder producers, ingredient distributors, and formulators in bakery, confectionery, cereals, beverages, dairy, savoury foods, nutraceuticals, pharmaceuticals and cosmetics.

Demand is anchored in consumer preference for honey. In a survey of 1,000 U.S. adults conducted in April 2024 by the International Food Information Council, honey scored 7.3 on a 10-point likelihood-to-consume scale, ahead of table sugar at 6.3 and stevia at 4.8, and United States honey consumption reached a record 2.0 pounds per person in 2024, according to the USDA Economic Research Service. Food processors accounted for 34% of United States honey use in the National Honey Board volume study, and cereals and bars accounted for 44% and bakery for 31% of new United States product introductions containing honey in 2017. These are the categories that dose ingredients by weight through dry blending, sifting and coating equipment.

Supply is set by the honey market. China produced approximately 456,000 tons of honey in 2024, a quarter of world output, and Yancheng Huamei Honey Products produces 4,000 tons of honey powder a year alongside 8,000 tons of natural honey. United States production fell 14% in 2025, Ukraine exported 41.4% less honey after the European Union reintroduced tariff-rate quotas, and Brazil exported 34,468 tons at an average price 27.5% higher than in 2024. Honey powder producers buy in the same market as honey packers, and a carrier-based powder at 55% honey solids uses roughly 0.65 kilograms of liquid honey per kilogram of powder, so origin prices pass directly into powder costs.

The market nonetheless faces real constraints. The World Health Organization defines free sugars to include sugars naturally present in honey, and sugars from honey count as added sugars in multi-ingredient foods in the United States. Conventional spray drying requires a carrier, with a maximum honey content of 50% on a dry basis with maltodextrin and 67% with gum arabic reported in published trials, and the resulting powders remain hygroscopic. The forecast therefore assumes steady growth in bakery, cereal and beverage use, faster growth in nutraceutical, Manuka and carrier-free grades, and a rise in average price from USD 6.32 per kilogram in 2026 to USD 7.61 per kilogram in 2036.

Liquid honey is viscous, crystallises and must be heated and pumped, while powder, flakes and granules are metered in the same way as sugar or flour. The growth of honey in cough, throat-care and functional formats is raising demand for higher-value pharmaceutical and nutraceutical grades. The National Institute for Health and Care Excellence guideline NG120 on acute cough recommends honey for people aged over one year as a self-care measure, a Cochrane review of six randomised trials with 899 children concluded that honey probably reduces cough more than no treatment, and a University of Oxford systematic review of 14 studies found that honey improved combined symptom scores by a mean difference of 3.96 points compared with usual care. China produced approximately 456,000 tons of honey in 2024, a quarter of world output, while Japan consumed 44,539 tons of honey in fiscal 2023 but produced only 2,636 tons, a self-sufficiency rate of 5.9%, according to the Japanese Ministry of Agriculture, Forestry and Fisheries.
