Outside the United States, a national industry standard for colouring foods took effect in China in 2025, and Brazil issued a guide on plant extracts and concentrates in March 2026, giving manufacturers a documented basis for declaring fruit and vegetable concentrates as food ingredients.
The market nonetheless faces real constraints. Orange juice concentrate futures opened 2025 at 526 cents per pound, fell to a four-year low of 132.5 cents in November and closed the year at 205.2 cents; the World Apple and Pear Association forecast the 2024 Polish apple crop at 3.2 million tonnes, down 17%; and world processing tomato volume fell 12.1% to 40.29 million tonnes in 2025. Spray drying consumes 4,500 to 11,500 kJ per kilogram of water removed and freeze drying 9,000 to 11,000 kJ, which exposes producers to industrial energy prices. The forecast therefore assumes continued colour reformulation in North America, steady growth of powder-format supplement, beverage and pet products, and a gradual rise in average price from USD 12.37 per kilogram in 2026 to USD 15.10 per kilogram in 2036 as the product mix moves toward colouring foods and standardised extracts.
