Meticulous Research®, a market research and market intelligence company, has published a research report titled “Concentrated Dry Fruit & Vegetable Extracts Market Size, Share, and Industry Analysis by Product Type (Fruit Extracts, Vegetable Extracts), Source, Drying Technology, Application, and Geography - Global Forecast to 2036”.

According to this latest publication from Meticulous Research®, the global concentrated dry fruit and vegetable extracts market is projected to reach $2,048.3 million by 2036, at a CAGR of 7.0% from 2026 to 2036. The market is valued at $1,036.5 million in 2026. In volume terms, it is projected to grow from 83,822 tons in 2026 to 135,651 tons by 2036, at a CAGR of 4.9%.

The growth of the concentrated dry fruit and vegetable extracts market is driven by the reformulation of food and beverage products toward natural colour, flavour and sweetening systems. In April 2025, the U.S. Department of Health and Human Services and the Food and Drug Administration announced the phase-out of petroleum-based food dyes, and FD&C Red No. 3 must be removed from food by January 15, 2027. Growth is also supported by powder-format beverage, supplement and pet products, by the shelf-life and logistics advantages of dry formats, and by clean-label pressure on synthetic additives. However, raw material price volatility, the energy intensity of concentration and drying, and the higher in-use cost of natural colour systems restrain the growth of this market.

Moreover, carrier-free and clean-label extract powders, natural replacements for yellow and orange shades, and organic and certified supply positions are expected to create growth opportunities for players operating in this market. However, energy use of 2,900 to 11,500 kJ per kilogram of water removed remains a major challenge for producers. The relocation of colour and ingredient capacity to North America, clinical substantiation of fruit extracts, the upcycling of processing co-products and the extension of natural colour into pet nutrition are key trends in this market.

Leading suppliers are adding capacity to meet demand. Döhler completed the acquisition of Treatt plc at approximately GBP 183 million, effective July 2, 2026, and inaugurated a plant in the State of Mexico in July 2026. Givaudan relocated its CHF 187 million liquids facility to West Harrison, Indiana in September 2026, and Sensient Technologies committed up to $250 million to natural colour capacity in March 2026.

The concentrated dry fruit and vegetable extracts market is segmented by product type, source, drying technology, application, and geography. The study also evaluates industry competitors and analyzes the market at the regional and country levels.

Among the product types studied in this report, in 2026, the concentrated dry fruit extracts segment is expected to account for the largest share of 66.3% of the market. This is due to the breadth of fruit raw material and the use of standardised polyphenol extracts in supplements. However, the concentrated dry vegetable extracts segment is projected to register the highest CAGR of 7.3%, driven by synthetic dye replacement.

Among the sources studied in this report, in 2026, the berries segment is expected to account for the largest share of 19.3% of the market. Juice powders and standardised extracts are drawn from the same fruit, and elderberry ranks among the top-selling herbal supplement ingredients in the United States. However, the aronia (chokeberry) segment is projected to register the highest CAGR of 8.8% during the forecast period.

Among the drying technologies studied in this report, in 2026, the spray drying segment is expected to account for the largest share of 73.2% of the market. Spray dryers offer continuous throughput and suit carrier-based drying of sugar-rich juices. However, the freeze drying segment is projected to register the highest CAGR of 9.4%, driven by premium supplement grades that require low-temperature drying.

Among the applications studied in this report, in 2026, the nutraceuticals and dietary supplements segment is expected to account for the largest share of 25.8% of the market. Herbal supplement retail sales in the United States reached $13.2 billion in 2024. However, the pet nutrition segment is projected to register the highest CAGR of 8.4%, as natural colour moves into pet food.

Among geographies, in 2026, Europe is expected to account for the largest share of 31.4% of the market, valued at $325.0 million. Europe hosts dense production clusters in Germany, the Netherlands, France, the United Kingdom and Italy. However, Asia-Pacific is projected to register the highest CAGR of 7.9%, led by India at 9.3%, driven by expanding packaged beverage, snack and seasoning production.
